Quick Hyderabadi Mutton Haleem | Restaurant Style in 1 Hour #cookwithchefmasaroor #haleem

Ingredients (0:10–0:35) For the mutton base: 500 grams mutton 3 tablespoons oil 2 tablespoons ghee 2 large onions, sliced 2 tablespoons ginger-garlic paste 1½ teaspoons salt ½ teaspoon turmeric ½ teaspoon black pepper powder 1 teaspoon red chilli powder 1 teaspoon garam masala 2–3 green chillies Fresh coriander and mint Lemon wedges For grains and lentils: ½ cup broken wheat ¼ cup basmati rice ¼ cup chana dal (Soaked for 30–45 minutes) Whole spices: 1 teaspoon shahi jeera 4 cloves 4 green cardamoms 8–10 black peppercorns 1 small cinnamon stick Finishing: ½ teaspoon garam masala ¼ teaspoon cinnamon powder --- Step 1 – Cook the Mutton (0:35–1:00) In a pressure cooker, add the mutton, salt, turmeric, half of the ginger-garlic paste, and the whole spices. Add about 2½ cups of water. Pressure cook for 5 to 6 whistles until the meat is tender. --- Step 2 – Cook the Grains (1:00–1:15) In another cooker, add the soaked broken wheat, rice, and chana dal. Add 3 cups of water. Cook for 4 to 5 whistles until everything becomes soft and mushy. --- Step 3 – Prepare the Masala Base (1:15–1:40) Heat oil and ghee in a heavy pot. Add sliced onions and fry until golden brown. Add the remaining ginger-garlic paste and green chillies. Now add red chilli powder and black pepper powder. Cook until the oil starts to separate. --- Step 4 – Combine and Mash (1:40–2:10) Add the cooked mutton along with its stock into the pot. Then add the cooked grains and lentils. Mix everything well. Now cook on low heat and mash continuously using a wooden masher or ladle until the haleem becomes smooth, thick, and sticky. --- Step 5 – Final Seasoning (2:10–2:25) Add garam masala and cinnamon powder. Cook on low heat for another 10 to 15 minutes for that perfect haleem texture. --- Step 6 – Garnish and Serve (2:25–2:40) Serve hot. Top with fried onions, fresh coriander, mint, lemon juice, and a spoon of ghee if you like. --- Outro (2:40–2:55) And your quick, restaurant-style Hyderabadi Haleem is ready.
