The ingredients for 4 servings are: 4 chicken thighs 2 Tbsp olive oil 1 cup grated carrot 1 cup chopped tomato 1/4 cup chopped red bell pepper 1/4 cup chopped onion (purple or white) 1 tsp ground pepper 1 tsp ground cumin 1 tbsp onion salt 1 tbsp ground guascas (you can omit or replace with fresh guascas, which you can then remove, or a bunch of cilantro) 1 tbsp chicken broth 1 tsp color or turmeric Salt to taste 500 ml water or the amount needed to sweat the preparation Fresh cilantro, avocado, and banana for serving.
