This Black Pepper Beef stir-fry is a timeless classic on the dining table and one of my favorite comforting dishes to make at home. While the steps are simple, achieving that "tender and juicy" texture requires attention to a few details. By marinating the beef with egg white and potato starch, we can perfectly lock in the meat's natural juices during the stir-fry. Adding the right amount of butter and freshly cracked black pepper brings a rich aroma and depth to the dish. In this video, I'm also sharing my dining routine: brewing a refreshing cup of Uji Gyokuro. Balancing the richness of the beef with the delicate aroma of the tea is a highly soothing daily ritual. Ingredients: Beef: Sliced into strips (keep some thickness to retain juices) Onion: Cut into chunks (similar size to the beef) Garlic: Chopped into chunks Marinade: 1 egg white, 1 tbsp soy sauce, 1 tbsp rice wine, a dash of potato starch Seasoning: Cracked black pepper, oyster sauce, sugar, salt, butter Steps: Marinate: Mix the beef with the marinade ingredients and let it sit for about 10 minutes. Sear: Heat a little oil and butter in a pan. Sear the beef until the surface is cooked, then remove and set aside. Aromatics: Add a bit more oil to the same pan. Sauté the garlic until fragrant, then add the onions and cook until softened. Season: Add the cracked black pepper, a splash of white wine, oyster sauce, sugar, and salt. Combine: Return the seared beef to the pan and stir-fry quickly until the sauce evenly coats the meat. Serve: Plate and garnish with a sprinkle of cilantro.
