Boil the potatoes and let them cool slightly, then peel them and mash them with a potato ricer. 2.) Add flour, salt, egg yolks, and softened butter and knead into a smooth dough. Mix the cinnamon and sugar, and bring salted water to a boil. 3.) Wash and pit the plums. Flour your hands and take pieces of dough slightly larger than the plum you're using. Flatten the dough and place the halved plum inside. Add 1 teaspoon of cinnamon/sugar where the pit was and shape the dumplings into a round shape. Make sure the dumplings are completely sealed. 4.) Carefully place the dumplings into boiling salted water; do not boil them. Make sure there aren't too many dumplings in the pot, so they don't stick to each other or to the bottom. Close the lid and let the dumplings sit in the boiling water until they rise to the surface. Meanwhile, heat butter in a large pan, add breadcrumbs and cinnamon/sugar, and toast slightly. Remove the cooked dumplings from the water with a slotted spoon and immediately coat them all over in the breadcrumbs, cinnamon, and sugar mixture. Have fun cooking and enjoy your meal!
