Edamame Avocado Dip | Guac Just Got an Upgrade🥑💚
Warm, inviting, and a little elevated: This fresh take on guacamole blends creamy avocado with tender edamame for a smooth, vibrant dip that feels both light and satisfying. It’s bright, somewhat spicy (if you want), and naturally rich. It comes together in minutes with just a handful of simple ingredients. This is one of my new easy dips that I make and use with crunchy clena chips or even as a veggie spread. Everyone loves this! The edamame adds a subtle nuttiness and a boost of plant-based protein, while lime and fresh herbs and a hint of heat, keep everything balanced and fresh. It’s the kind of recipe that works just as well for a quick snack as it does for a beautiful spread when friends stop by. Serve it with colored seeded tortilla chips, a warm pita, crisp vegetables, or your favorite whole grain crackers for an easy, feel-good dish that doesn’t try too hard—but delivers every time. Ingredients (makes ~2–2.5 cups): 2 cups shelled edamame (cooked and cooled) 2 ripe avocados 2 tablespoons tahini 2 tablespoons extra-virgin olive oil 1–2 cloves garlic, minced ¼ cup finely chopped onion (white, yellow, or sweet) 1 teaspoon ground cumin 1 teaspoon ground coriander Handful Cilantro (2 T) 2–4 tablespoons fresh lemon juice (adjust to taste) 1-2 tablespoons fresh lime juice 1–4 tablespoons water (to adjust texture) ½ teaspoon sea salt (adjust to taste) Pinch of cayenne or smoked paprika (optional) Fresh cilantro or parsley for garnish Instructions: Bring a small pot of water to a boil. Add edamame and cook until tender. Rinse with cold water and set aside. In the bowl of a food processor, combine edamame and flesh of one avocado. Blend until edamame is finely chopped. Don't worry, it's normal for it to appear a bit gritty or grainy. To the processor, add the remaining ingredients and pulse until a chunky but somewhat smooth texture is achieved. Taste test to see if you prefer more acidity (lime/lemon juice) or salt and adjust as desired.
