Adyghe cheese, simple recipe. cow's milk - 6 l. vinegar - 100-120 ml. (+/-) Brine - 30 g of salt per 1 l of whey or to your taste. For longer storage, the brine must be made in cold boiled water with the addition of salt (150-180 g per 1 l). And before using in food, the required amount of cheese is soaked in cold water for several hours to remove excess salt. The weight of my cheese from 6 l of milk is 1067 g.
