I experienced harvesting natural water shield (Junsai) at Ooyachi Marsh in Murayama City, Yamagata Prefecture. Junsai is an aquatic plant belonging to the water lily family, known for its slimy, jelly-like texture and crisp bite. Harvesting was done using traditional boats, and even first-timers received thorough instruction, making it a safe and enjoyable experience. The harvested Junsai was enjoyed with ponzu sauce and brown sugar syrup and kinako (roasted soybean flour), both of which were exquisite. While the number of harvesters is decreasing due to an aging population, the hope is that this experience will encourage more people to become familiar with the plant.
