The choice of wine is certainly crucial, and we've chosen Casa Comerci's Libìci, with its classic ruby ​​color and purple flecks around the edges. The aromatic impact recalls the typical regional aromas of fresh and/or dried red fruit, supported by floral and vegetal notes and savory fragrances. Preparation time: 12-18 hours Cooking time: 2 hours Ingredients: 1 kg of beef (Cappello del Prete, you can use up to 1.5 kg) 1 bottle of particularly full-bodied red wine 2 celery stalks 2 carrots 1 onion Salt Extra virgin olive oil Bay leaves and rosemary 8 peppercorns 6 juniper berries #brasatoalbarolo #brasato #brasatobenzo Preparation Clean and wash the vegetables. Take a pot large enough to hold the cut of meat. Place the meat in it, then add the previously diced carrots, celery, and onion. Add all the herbs and the wine, which should almost completely (if not completely) cover the meat. Cover with plastic wrap and refrigerate for at least 12 hours and up to 18 hours. After marinating, the meat will have acquired the ruby ​​color typical of the wine. Pat the meat dry with paper towels. Cooking Take a large pan and drizzle a little extra virgin olive oil on the bottom. Once hot, brown the meat for 5 minutes per side over medium heat. Meanwhile, heat the remaining wine and bring to a boil. Once the meat is browned on both sides, add the vegetables and seasonings, ensuring the vegetables are under the meat. Cook for 15 minutes, uncovered. After 15 minutes, change the heat for the meat, placing it on the lowest burner at the lowest setting, adding the red wine, then cover with the lid and cook for 2 hours, without opening the lid, to avoid sudden temperature changes. Once cooked, remove the meat and set it aside to cool. Remove the vegetables and separate them from the seasonings. Then strain the remaining sauce and return it to the pot. Reintroduce only the blended vegetables and cook until the desired creaminess is achieved over low heat. Season with salt. Once the red wine braised beef has cooled, take a particularly sharp knife and cut it. Now let's plate it. Pour the braised beef sauce on the bottom of the pot, which will have two functions: salt and warm the meat. In fact, we didn't salt the meat; the braised beef sauce will provide the flavor.
