Vegan Pulled Jackfruit Sandwich | Veganuary

Jackfruit is a huge fruit that grows in south-east Asia. Its flesh is pinkish and fibrous and could easily be mistaken for tuna. Unripe jackfruit is now sold in cans in the west and it's ideal for vegan dishes. Like tofu, it absorbs flavours easily. You can have your jackfruit as a replacement for pork (especially pulled or shredded pork like here) or chicken. Or just as jackfruit, why not! In this video, I make something like a pulled pork sandwich, including my own BBQ sauce recipe and homemade classic coleslaw (you might want to look at vegan mayonnaise if you want 100% vegan-ness).
