The ingredients are identical, yet their methods couldn't be more different. Along the way, we visit massive copper cazos handcrafted in Santa Clara del Cobre, explore the streets of Quiroga. It's the carnitas capital of Mexico. We also learn why generations of cooks have dedicated their lives to perfecting this iconic dish. Some stir the cazo. Others never touch it. Some swear their method is the only correct way. But in the end, the question remains: Can two completely different techniques produce the same legendary carnitas?
