This recipe can make up to 18- 21 ube regular cupcakes Ingredients: 1 cup cake flour (or sifted all-purpose flour) 1 ½ tsp baking powder ½ tsp salt 1/4 cup white sugar 4 egg yolks 1/4 cup vegetable oil 1/3 cup whole milk 2 tsp vanilla extract 2 tsp ube extract Meringue: 4 egg whites ½ tsp cream of tartar or (¼ tsp vinegar) 1/3 cup sugar For the Ube Cream Cheese Whipped Frosting: 8 ounces cream cheese (chilled) 2 cups heavy whipping cream (chilled) ½ cup + 2 tablespoon white sugar 1–2 tsp ube extract 1 tsp vanilla extract Bake at 350°F for 15 minutes. #ubecupcakes #ube
