Follow me on Facebook - / timeline Subscribe here - http://bit.ly/TveR3B Comment and give us a LIKE Buttermilk Rolls 2 cups (484 grams) cold buttermilk (see substitutes below) + extra if the dough is dry 4 cups (580 grams) all-purpose flour 2 tablespoons (29 grams) baking powder 1 teaspoon (6 grams) baking soda 2 teaspoons (11 grams) salt 12 tablespoons (170 grams) unsalted butter, cubed and chilled Preheat oven to 450°F (230°C). If you don't have buttermilk, do one of the following: A. Place two tablespoons of vinegar or lemon juice in a measuring jug. Add milk to make two cups. Do not mix. Let it stand for about five minutes, until the milk begins to curdle. Place in the refrigerator to chill. B. Mix 1 1/2 cups of plain yogurt with 1/2 cup of milk. Mix well and chill. Whisk together all the dry ingredients in a large bowl. Add the cubed butter and begin to incorporate it with a pastry blender or two knives. You can also do this in a food processor. Work quickly so you don't warm the mixture, but make sure all the butter is incorporated. You want your flour to resemble coarse crumbs. Make a well in the center and add the buttermilk. Gently fold the dry and wet ingredients together, using a wooden spoon. Do not knead your dough. If the mixture is too dry, add more buttermilk, milk, or cream, one tablespoon at a time. Transfer the dough to a clean, lightly floured work surface. Finish gently folding in all the ingredients until there are no more dry patches. Carefully roll out the dough with your hands until it is about 1/2 inch thick. Try to keep it the same thickness throughout. Start cutting out the cookies with a cookie cutter or a glass. Don't rotate the cutter. Make a clean cut. Transfer the cookies to a lined baking sheet. Make sure they touch each other so the sides don't get crusty. Place the tray on the bottom rack of the preheated oven and bake for about 15 minutes.
