Diario de un Cocinero - Primer Hervor (20/04/2012)

It's the eleventh anniversary of PUJOL, Enrique Olvera's restaurant. For this day, Olvera invites ten chefs who trained at this iconic spot of fine dining in Mexico City. They all work in different parts of the country and have now returned here at Olvera's invitation. Each comes with the mission of preparing a dish for one of the six courses into which the day's menu is divided. Thus, each chef is characterized by the care and detail in the artisanal construction of their dishes: where the idea comes from, how the flow of flavors is worked, how each detail is prepared, etc. The execution of each dish will allow us to learn about the dynamics and work environment of the staff and the place. Ultimately, this reunion becomes a celebration.
