This is a wine produced from grapes frozen while still on the vine. The goal of this new video series is to show, in a very simple way, with simple materials, how wine can be made. In this stage of the process of making our ICEWINE-style wine, we do the first racking, the purpose of which is to begin cleaning our wine by separating the lees/sediments deposited at the bottom of the fermenter. In addition, we talk a little about malolactic fermentation, important for red wines to soften the flavor and reduce acidity, as the Oenococcus oeni bacteria (naturally present on the grape skins) will transform malic acid into lactic acid.
