Making masala lamb biryani - A much requested & delicious variation on our usual lamb biryani recipe

Hi all Today we decided to do a masala lamb biryani. The rich masala curry is served with a braised rice which is a rich but perfect accompaniment. We also served with our sour milk salad -    • Making Sour Milk and Cucumber Salad - Durb...   Ingredients 1.5kg lamb meat Marinate with 1 tbs crushed ginger and garlic 1 tsp steak and chops spice 1 tsp dried mixed herbs Grind of black pepper 1 tbs Worcestershire sauce Splash of oil 1 cup sour milk (Maas) 1 1/2 cup biryani dhal (brown lentils) soaked overnight 1/2 cup oil 1 onion roughly chopped 1 tbs mixed masala 1 tbs pure chillie powder 1 tsp hurdee (tumeric) powder 1 tsp garam masala 1 tsp dhania (coriander) powder 1 heaped tbs rough salt (adjust to taste) 2 cinnamon sticks 1 star anise 3 green elaichi (cardamom) 1 tsp saunf (fennel) seeds 2 bay leaves 2 medium tomatoes 1 cup peas (optional) 4 potatoes, halved and fried with colouring Curry leaves and fresh thyme for braising Spring onion, mint and dhania to garnish For rice 3 cups basmati rice (long grain) 3 bay leaves 1 tbs rough salt 1/2 tsp egg yellow colouring To braise rice 2 tbs margarine 1 cinnamom stick 1 tsp jeera (cumin) seeds Serve with sour milk or carrot salad How we mix our mixed masala:    • How I mix my masala   Don't forget you can shop our aprons at: https://www.tailorninaaprons.com/prod...
