Walnut and Eggplant with eggs - Traditional Azerbaijani Recipe

Eggplant kuku 🍆 Ingredients: ~~~~~~~~ Eggplant 600 g Onion 200 g Eggs 5 Walnut 70 g Vegetable oil 70 ml Salt Pepper Method of preparation: ~~~~~~~~~~~~~ Peel, wash, and grate the eggplant and onion (you can also use a meat grinder). Add salt to the chopped eggplant and onion and wait for 5-10 minutes until the juice comes out. Then we squeeze the water well with cheesecloth or with our hands. Chop the walnut into small pieces, beat the eggs, add vegetables and walnuts, add salt and pepper to taste. Add vegetable oil to the pan and wait for it to heat up. Then we add kuku and cook with a lid on low heat. When the bottom is browned and the top hardens a little, we turn the cake and wait for the bottom to brown again.
