Hey everyone, today we're going to talk about the number one mistake new kamado cookers make. The kamado is one of the most versatile cooking machines out there once you know how to run its fire. In fact I'll go so far as to say that once you figure out how to manage a kamado's fire, you'll find yourself using it much more often than your other cookers because it is so easy to run and creates such a great product. At the end of the day the number one rule is to have patiences and let your fire slowly creep up to your target temperature as opposed to trying to rush right up on it. To do this you'll want to get your fire started in your kamado your favorite way, my favorite way is to use a half a chiney of lit coals dumped onto unlit coals in the cooker. Leave your vents, both top and bottom, wide open until you're roughly 75 to 50 degrees from your target temperature. This is the critical time where you need to shut your vents down to what they look like when your maintaining that temperature. For me this looks like ¼ inch open on the bottom vent, and just a little bit more open than the half moons on the top vent on the akorn. Within about another 20 minutes your kamado should settle into its temperature. At this point if i want to increase or decrease the temperature any i do that with small movements on my top vent. That's all there is to it. Once you get used to this procedure you can cook anything on your kamado and it becomes that much more fun to use!
