Ingredients for Garlic Herb Butter Turkey Brine: 13 lb turkey 1 gallon of water 1 gallon of Ice 1 cup kosher salt 1 tablespoon pepper corns 2 teaspoon chili flakes 4 bay leaves 60grams ginger 1 garlic bulb 5 sprigs Thyme 2 sprigs of Rosemary 2 sprigs of sage 1 large lemon For marinade: 2 teaspoon black pepper 2 teaspoon onion powder 2 lemons 2sprigs Rosemary 5 sprigs of thyme 1 sprig sage 1 garlic bulb 3tablespoons butter 1 teaspoon salt or to taste For basting 2 cups free range chicken broth 2 tablespoons butter 4 sprigs of thyme 1 sprig of oregano For cavity and roasting pan 4 celery stalks 2 large onions 6 medium sized carrots Bake at 360°F Gravy Ingredients 1 tablespoon unsalted butter 1/3 cup all purpose flour 4 cups pan drippings from turkey (you make substitute with broth made from your giblets or any broth) salt and pepper to taste if needed. Ingredients for Leg of lamb: 5.6 lb boneless leg of lamb 1 bulb of garlic 2 sprigs of rosemary about 6 sage leaves 2 teaspoons all purpose seasoning 2 teaspoons paprika 1 tablespoon grated ginger 2 tablespoons avocado oil 2 teaspoons black pepper salt to taste Mashed Potatoes Ingredients: Ingredients: 3 Lb Potatoes (I used Yukon Gold ) 10 tablespoons salted butter (Kerrygold is my all time favorite brand) 3/4 cup warmed whole milk 1 teaspoon salt 6-8 cloves roasted garlic Ingredients for Candied Yam 3. 5 lb yams or sweet potatoes 6 tablespoons unsalted butter ½  cup white sugar ½ cup brown sugar 1 teaspoon cinnamon powder 1 teaspoon ginger powder ½ teaspoon allspice ¼ teaspoon grated nutmeg 3 tablespoons warm water Ingredients for stuffing: 12 oz herb seasoned cubed stuffing 1 cup diced carrot 1 cup diced celery 1 cup pecan halves 1 cup dried cranberries (craisins) 1/4 teaspoon black pepper 4 tablespoons butter (I used salted) 2.5 cup free range chicken broth salt to taste Ingredients for carrot cake: 3 cups grated carrots 2 cups all purpose flour 1 ½ cup white sugar 1 ½ cups chopped pecans (optional) ¾ cup fresh pineapple chunks (optional) 1 ½ cups vegetable oil 4 large eggs 1 teaspoon salt 2 teaspoons baking soda 2 teaspoons ground cinnamon For cream cheese frosting: 3 cups confectioners’ (icing or powdered) sugar 2 8oz packages cream cheese 1 stick butter (8 tablespoons) 1 teaspoon pure vanilla extract 3/4 cup chopped pecans (even better slightly toasted) Side note: walnuts work just as well. I use that a lot too.
