Making blackberry jam with Pomona's Pectin

We love our jams and make quite a few different kinds every year. Not only are jams delicious and bring back summer memories during the winter but you can use them to make great pan sauces as well. We'll do a video on pan sauce soon so keep an eye out for that. When I make jam I want to taste the fruit not sugar. Long ago I started looking for a more natural way to make jams and reduce the amount of sugar to make them healthier and taste more like the fruit. What I found was Pomona's Pectin and I love this stuff. I can use maple syrup, honey, sugar, stevia, or just about any sweetener I want to make great jams.
