🇻🇨Coconut Fudge: St Vincent/Caribbean
Back in St Vincent and the other Caribbean islands we normally grate the coconut and extract the milk to make the fudge. It won't hurt to use the tin and it taste delicious. Recipe 1 13.5 oz tin of coconut milk 1 14 oz tin of condensed milk 1 cup brown sugar 2 tablespoons of butter 1 teaspoon grated ginger (you can use powder ginger if you prefer) 1 teaspoon nutmeg 1 teaspoon cinnamon powder 1/2 teaspoon of vanilla extract Boil down mixture until it gets thick and start leaving the pot Use a spoon or a stiff spatula with butter to flat it out nicely and evenly or a stiff spatula to smooth it out quickly. Score, slit, or line fudge out while it is still cool for easy cutting.
