Dîner à La Rotonde * (Hôtel du Palais - Biarritz) - 17 octobre 2021

This restaurant is the chic, gourmet dining establishment of the Hôtel du Palais in Biarritz. At its helm is Aurélien Largeau, a young chef with a wealth of experience in prestigious restaurants. It all began at La Rotonde, where, after studying at the hotel school in La Rochelle, he started as a commis chef under the Michelin-starred chef Jean-Marie Gautier, also a Meilleur Ouvrier de France (MOF) in 2001. He then moved on to Coutanceau in La Rochelle, Le Richelieu on the Île de Ré, and of course, La Maison d'à Côté with Christophe Hay in Montlivault, where I first encountered him. This "high-profile" chef entrusted him with his first major responsibility as head chef of La Table d'à Côté in Ardon, near Orléans, in 2019. But despite earning a Michelin star in 2020, Aurélien dreamed of striking out on his own. So, when the Hyatt group contacted him in early 2020 to manage the various restaurants at their Hôtel du Palais in Biarritz, he didn't hesitate and accepted their offer. In a way, it was a return to his roots! Full circle. Last October 17th, surprisingly enough, marked the final service of the 2021 season (the establishment will reopen in June 2022!). After carefully considering the two menus available, we chose the one showcasing the bounty of the Basque Country... which I encourage you to view, created by Aurélien Largeau and his team (the young waitstaff are incredibly kind and attentive). Note: On March 22, 2022, in Cognac, La Rotonde by Aurélien Largeau was awarded a Michelin star, and in addition, its pastry chef, Aleksandre Oliver, received the "Passion Dessert Selection 2022."
