UPDATE (June 12, 2026): This method has 'apparently' been patched with the recent update, so I tried to do it again. I loaded a past save from before I had the armor and tried to pickpocket him again, it worked and I was still able to get the armor. So it looks like you can still pickpocket it from him. However, I do believe they actually patched it so you can't fight him, down him and loot the key from him while he's downed. Let me know in the comments if anyone has problems doing this.
