The sound of the train whistle and its wheels grazing the rails announce the arrival at the Soledad de Doblado Station, the birthplace of the region's finest garnachas. Between 1872 and 1873, the Mexican Railroad route was inaugurated, along with the train station, which years later would witness the birth of the Garnacheras Choleñas. A cobblestone path leads to this place steeped in tradition and history, where a dozen women from Choleña gather early in the morning to offer diners their finest garnachas. The aroma of onion, garlic, tomato, guajillo and serrano peppers, and meat emanating from the containers holding the garnachas, attracts customers who go out of their way to try this succulent delicacy. Among the wide variety of food are potato goriditas with green or red sauce, "los cartuchos" (boiled eggs), bean garnacha, and the classic or chipotle garnacha, the latter being one of the most requested by customers.
