My Mom's Famous Chilli Chicken & Frankie Rolls Recipe | Maa Ki Yaadein Ep 08 | Chef Amrita Raichand

Welcome back to Maa Ki Yaadein Episode 08. Some recipes are remembered for their taste, while others are remembered for the memories they carry. In this episode, I revisit two dishes that continue to be family favourites even today - my mother's Chilli Chicken and her unforgettable Frankie Rolls. Chilli Chicken Ingredients Chicken (Curry-Cut) – 1 kg Salt and Black Pepper – To Taste Vinegar – 2 tbsp Cooking Oil –2 tbsp Garlic Cloves (Finely Chopped) – of a whole bulb Ginger (Julienned) – 2-inch piece Onions (Sliced) – 3–4 Green Chillies (Slit) – 5–6 Green Chilli Sauce – 2 tbsp Soy Sauce – 2 tbsp Ketchup – 1 tbsp Additional Soy Sauce, Vinegar, Salt and Black Pepper – As Required for Seasoning Method 1. Marinate the chicken with salt, black pepper, and vinegar. Using a fork, lightly prick the chicken pieces to help the marinade penetrate better. Set aside for 5–10 minutes. 2. Heat the oil in a large kadai. Add the chopped garlic and julienned ginger. Sauté until fragrant. 3. Add the marinated chicken to the kadai. Cover with a lid and cook over high heat. The chicken will begin to release its moisture. Continue cooking until most of the liquid has evaporated and the chicken is partially cooked through. 4. Add the sliced onions and mix well. Cook for a few minutes until the onions soften slightly. 5. Add the slit green chillies, green chilli sauce, soy sauce, and ketchup. Mix thoroughly to coat the chicken evenly. 6. Continue cooking until the chicken is fully cooked and well coated in the sauce. 7. Adjust the seasoning with additional soy sauce, vinegar, salt, and black pepper, if required. 8. As the onions soften during cooking, add a little extra sliced onion towards the end if you prefer a crunchier texture. 9. Check the seasoning one final time and switch off the heat. Serve immediately. Serving Suggestion: Best enjoyed with dal chawal, tomato ki chutney, and aloo beans ki bhujia. It also pairs wonderfully with parathas. ⸻ Frankie Rolls Ingredients Prepared Chilli Chicken – From Recipe Above Eggs – 2 Salt and Black Pepper – To Taste Homemade Parathas – 2 Oil – As Needed Capsicum (Julienned) – As Required Onions (Sliced) – As Required Ketchup – As Required Method 1. Important: Remove all the bones from the chilli chicken and shred the chicken into thick strips before using it as the filling. 2. Crack the eggs into a bowl. Season with salt and black pepper and whisk well. Heat a flat pan and add a little oil. 3. Place one paratha on the hot pan. Pour a portion of the beaten egg over the paratha. Carefully flip the paratha so that the egg cooks and adheres to it. 4. Once the egg is cooked, flip the paratha again and cook until both sides are lightly golden. Place a generous amount of shredded chilli chicken along one side of the paratha. 5. Top with julienned capsicum, sliced onions, and 1 small spoonful of ketchup. Remove from the pan and roll tightly to form a Frankie. 6. Repeat the process with the second paratha. 7. Serve hot with ketchup on the side. Yield: Approximately 2 large loaded Frankie rolls with extra chilli chicken for serving separately, or 4–6 Franky rolls if all the chilli chicken is used as the filling. Growing up, these Frankie Rolls were a special part of our family time. Whether it was an evening spent playing carrom with my brothers or simply gathering together at home, my mother always made sure there was something delicious waiting for us. Even today, everyone who tasted these recipes remembers them fondly. But this episode is about much more than food. Through every recipe, every lesson, and every act of love, my mother showed me that food is never just about ingredients. It's about bringing people together, creating memories, and making others feel cared for.
