How to make Easy Pavlova Bondi Harvest

Merry Christmas everyone! This dessert is a tradition at my family Christmas table! I hope it can become a tradition at your Christmas too! Definitely a winner on any Christmas menu. Ingredients: 240g Egg whites 455g sugar 1 Vanilla Bean Lemon Zest 500ml Cream and drunken Cherries on top! Method: Meringue Discs: Begin by whisking your egg whites. As they are being whisked start adding your sugar a spoonful at a time. As the mix gains stability you can add the sugar faster. Now add your vanilla seeds and lemon zest Continue until the egg whites form stiff peaks. Now on a oiled baking tray pour into circular moulds and smooth out. Carefully remove your mould leaving behind a perfect circular disc. Do this twice. Put your two discs in the oven at 100C for an hour then turn the oven down to 75C for another 90 minutes. Cream Filling Pour your cream into a mixer and whisk until stiff peaks form. While whisking grate in lemon zest. Set aside in the refrigerator until needed. Construct by spreading cream onto a base Meringue layer then carefully place second Meringue on top. Use left over cream to decorate the top and finish with a good spread of Drunken Cherries.
