LECHON KAWALI WITH TOMATO & ONION SAUCE - MADE IN THE INSTANT POT AND AIR FRYER

INGREDIENTS: 2 LBS PORK BELLY CHUNKS 1/2 TBSP SALT 1 TSP PEPPERCORN 1 BAY LEAF 3 GARLIC CLOVES 2 TOMATOS, CHOPPED AND SEEDED 1-2 TSP SUGAR 1/4 CUPS DICED ONIONS 1 TBSP FISH SAUCE 1 TSP SESAME OIL 1 TBSP SOY SAUCE 2 STALKS GREEN ONIONS DIRECTIONS: 1.) Place pork belly in Instant Pot and pour enough water to cover. 2.) Add garlic, bay leaf, peppercorn, and salt. 3.) Seal the vent and set on "Meat" setting for 20 minutes. 4.) After 20 min, carefully release the vent. 5.) Pat dry with paper towels 6.) Place pork in Airy Fryer. Set on 400 degrees for 20 minutes. 7.) After 20 min, flip over and air fry for 5 min on 400 degrees. 8.) Let it cool 9.) While the pork cools, let's make the sauce. 10.) Combine fish sauce, soy sauce, sugar, and sesame oil 11.) Mix well 12.) Throw in the tomatoes and onions. 13.) Chop the pork into bite size pieces. 14.) Pour tomato mixture over the top. 15. ) ENJOY!!
