Full written recipe - Kolhapuri Egg Curry Prep time: 25-30 minutes Cooking time: 40-45 minutes Serve: 6-8 people Ingredients: Paste OIL | तेल 2 TBSP CUMIN SEEDS | Cumin 1 TSP CORIANDER SEEDS | साराबतुं 1 TBSP CLOVES | लांग 4-5 NOS. BLACK PEPPERCORNS | सोनालिक 4-5 NOS. BLACK CARDAMOM | बापल किया जाता है 1 NO. GREEN CARDAMOM | घरेलू प्रकार की लहर 2-3 NOS. CINNAMON | कार्टून 1 INCH SPICY RED CHILLI | तेज बालकपन लल्ली 3-4 NOS. KASHMIRI RED CHILLI | Kashmiri लहर की लख 7-8 NOS. FRESH COCONUT | Fresh coconut 1/2 CUP (GRATED) WHITE SESAME SEEDS 1 TSP POPPY SEEDS 1 TSP TOMATO 5-6 NOS. GARLIC 10-12 CLOVES CASHEW 20-25 NOS. SALT TO TASTE HOT WATER AS REQUIRED Tempering & Gravy OIL 2 TBSP CUMIN SEEDS 1/2 TSP RED CHILLI 2 NOS. BAY LEAF 1 NO. ONION 3 MEDIUM SIZED. (CHOPPED) GINGER GARLIC PASTE 2 TBSP GREEN CHILLI 3 NOS. (CHOPPED) TURMERIC POWDER | Turmeric powder 1/2 TSP KASHMIRI RED CHILLI POWDER | Kashmiri red chilli powder 1 TBSP HOT WATER | Hot water AS REQUIRED SUGAR | Sugar A PINCH Tossing Veggies & eggs BUTTER | Butter 2 TBSP CAPSICUM | Capsicum 1 MEDIUM SIZED. (PETALS) ONION | Onion 1 MEDIUM SIZED. (PETALS) BOILED EGGS | Boiled eggs 8 NOS. TURMERIC POWDER | Turmeric powder A PINCH KASHMIRI RED CHILLI POWDER | Kashmiri red chilli powder A PINCH GARAM MASALA | Garam masala A PINCH FRESH CORIANDER | Green coriander A HANDFUL (CHOPPED) Final additions FRESH CREAM | Fresh Cream 2-3 TBSP ROASTED KASURI METHI POWDER | Roasted Kasuri Methi Powder A PINCH LEMON JUICE | Lemon juice of half a lemon FRESH CORIANDER Green Coriander A HANDFUL (CHOPPED) Method: Set a saucepan/kadhai over high flame & let it get cooked, then add oil & let the oil heat up as well. Once the oil gets hot, add the whole spices followed by all the remaining ingredients of the paste. Stir well & cook over high flame for 4-5 minutes. Add hot water, then cover & cook the mixture over medium flame until the tomatoes turn completely mushy, this process will take about 8-10 minutes. Switch off the flame & let the mixture cool down completely, then add it into a mixer grinder jar & blend it into a fine paste using water as required. Set a kadhai over high flame, add oil & let it heat up. Next, add the cumin seeds, let them crackle then add red chilli, bay leaf & onions, stir well & cook the onions over medium high flame until they turn light golden brown. Add the ginger garlic paste, green chillies, stir & continue to cook further until the onions turn completely golden brown. Further, lower the flame & add turmeric powder & kashmiri red chilli powder along with a splash of hot water, stir & then cook over high flame until the oil separates, this will only take 1-2 minutes. Next, add the prepared paste along with a large lunch of salt, stir well & cook over high flame for 1-2 minutes, then cover & cook over medium flame until the oil separates, remove the lid & stir the gravy at regular intervals & if it gets too dry, add some hot water & continue to cook further. Once the gravy is cooked, add hot water to adjust the consistency of the gravy, you can keep it as per your preference but it's usually semi-thick & not too runny. Taste & adjust salt if required & add some sugar to balance the tanginess, the base gravy for the recipe is recipe, set the flame to low or you can even switch it off while you toss the veggies & eggs. Set a fry pan over high flame, let it heat up & then add the butter, let the butter get hot. Then add the capsicum, onion, boiled eggs, powdered spices & fresh coriander toss over high flame for 1-2 minutes, then add it into the gravy. Also add the final ingredients, stir well & your delicious, spicy Kolhapuri Egg Curry is ready, serve it with butter naan or tandoori roti.
