Freshly Milled Flour Tortillas

Freshly Milled Flour Tortillas 270g or 1cup 1-2 tbsp Hot filtered water 4g or 1 tsp Baking powder 8g or 1 1/2 tsp Real salt 61g or 4 1/2 tbsp Olive oil 402-410g or 3 1/4 cups Hard white wheat berries -Combine everything in a mixer and knead for about 5 mins until dough comes together. -Remember to fight the urge to add more flour. Dough may stick to the side of the bowl, but test it with your hands before adding flour. -No need to rest dough, right after 5 mins of mixing make 50g dough balls and place on a tray. (You can make any size tortilla you like, my go to is 50g) -Cover dough balls and rest for 20 minutes. The last 5 minutes of resting get your pan and tortilla press(if using) hot and ready for cooking. -Have some sort of tortilla warmer ready to put cooked tortillas in. -Either roll out dough ball or place in tortilla press until"screaming" noise is heard. If you don't hear that noise you may need to turn your press on a higher heat. Mine is about halfway between min/max heat. -place tortilla on hot pan, it cooks pretty fast, flip over and cook other side and place in tortilla warmer. It may take cooking a few before you get the hang of it.
