Kerala Sweet Delight Rice Balls | Homemade Ari Unda
Ingredients Rice-2 glass Peanut - 1 cup Jaggery - 1 or 2 pieces Cardamom - 3 to 4 nos Method Take a bowl, add rice, and pour a sufficient amount of water. Wash it well, drain, and set aside. Heat a pan, add the washed rice, and saute and fry it well. Remove from heat and transfer to a plate to cool. Add peanuts to the same pan and roast them well. Remove from heat and set aside. Grate the coconut and keep it aside. Add the grated coconut to the pan and roast it until it turns light golden in color. Heat water in a pan, add jaggery pieces, and boil well. Grind the roasted rice into a fine powder and set aside. Grind the roasted peanuts and cardamom into a fine powder and set aside. Grind the roasted coconut and set aside. Once the jaggery is well boiled, remove from heat, strain it, and set aside. Take a pan and add the ground rice powder, peanut cardamom powder and ground coconut. Mix everything well. Slowly add the jaggery syrup and mix thoroughly. Take small portions of the mixture and shape them into lime sized balls by pressing firmly between your palms. Repeat until all the mixture is used. Serve the delicious rice balls with tea or coffee.
