Sweet makhana Ingredients: • 2 cups makhana (fox nuts) • 1/2 cup jaggery, grated or powdered • 1 tbsp white sesame seeds • 1/4 tsp salt • 1 tsp ghee ⸻ Instructions: 1. Roast the Makhana: • Dry roast the makhana in a pan on low flame for 7–8 minutes until crispy. Stir constantly. • Set aside. 2. Toast the Sesame Seeds: • In the same pan, dry roast sesame seeds for 1–2 minutes until aromatic. • Set aside. 3. Melt the Jaggery (without water): • In the same pan, add jaggery and ghee on very low flame. • Keep stirring until the jaggery melts smoothly. It will turn glossy and slightly frothy — be careful not to overcook it, or it may harden too much. 4. Mix it All: • Turn off the heat and quickly mix in the roasted makhana. • Add the toasted sesame seeds and salt. • Stir well to coat evenly. 5. Cool & Store: • Spread on a plate to cool. • Once cooled and crisp, store in an airtight container Here’s a Spicy Masala Makhana recipe ⸻ Ingredients: • 2 cups makhana (fox nuts) • 1 tbsp butter (or ghee) • 1/2 tsp chili powder • 1/4 tsp turmeric powder • 1/2 tsp chaat masala • 1/4 tsp degi mirch (for color and mild heat) • 1/4 tsp pink salt (or to taste) ⸻ Instructions: 1. Roast the Makhana: • In a dry pan, roast the makhana on low flame for about 7–8 minutes until light and crisp. • Keep stirring so they don’t burn. • Remove and set aside. 2. Prepare the Masala Butter: • In the same pan, add the butter and let it melt on low heat. • Add turmeric, chili powder, degi mirch, and pink salt. • Stir quickly — don’t let the spices burn. 3. Coat the Makhana: • Immediately toss in the roasted makhana. • Stir to coat evenly with the spicy butter mix. 4. Finish with Chaat Masala: • Turn off the heat and sprinkle chaat masala. • Mix well and let it cool slightly. 5. Serve or Store: • Let them cool down completely before storing in an airtight jar.
