Best Leftover Mashed Potato Cakes!! On the Blackstone 36" Griddle

Do you have left over mashed potatoes in your fridge? You know, those ones in the back corner. Yeah, those. Get them out, throw some flour, cheese, onion, eggs, salt, and pepper and cook them! This is how I do potato cakes with left over mashed potatoes! 2 cups left over mashed potatoes 2 eggs 1/4 cup flour 1/4 cup onion 2-3 chives cut 1/4 cup cheddar cheese (you can use your favorite) Mix ingredients well, and fry in a pan or Blackstone about 3-4 mins a side in some bacon grease. Serve with some sour cream or your favorite condiment.
