As Filhoses da Avó Filomena Tortosendo Beira Baixa
Grandma Filomena and Grandpa Apolinario are my in-laws from Tortosendo, Covilhã. My wife and I decided to surprise them this Christmas (2015) by making their traditional fritters, which they love so much. I apologize for not being able to help with the recipe, but my mother-in-law is quite old and can't give exact quantities; she does it by eye, as she learned, and she's not often wrong. I know it requires many eggs, sugar, yeast, salt to taste, brandy to taste, olive oil to taste, and to let it rise for one or two hours in a warm place. Try it first with a small amount so it doesn't spoil too much... the video also helps a lot because I filmed everything from beginning to end...
