Founded by Mary Lalboi and her husband Muan Tonsing in the early 2000s, Rosang started with one mission — bringing authentic everyday flavours from the Northeast to Delhi. Think fermented pork, bamboo shoots, organic greens, smoked flavours, and recipes straight from the hills. 🌿🔥 After being away for a while, Rosang Café has reopened in Humayunpur, and we got a chance to shoot with Mary Lalboi herself. She walked us through every dish, every ingredient, and the stories behind the food — making this experience even more special. Smoky, fermented, comforting, spicy — this meal had everything.
