Braised Cabbage - a flavorful and easy side dish!
I had a half of head of cabbage left over from a previous meal and used it to make a quick side dish with lots of flavor! This dish is vegetarian, but you can add meat to it by starting with a few strips of diced bacon that you render in the pan and then add your vegetables. As presented here, it's a nice dish for Lent. 3 TBSP butter (divided 2+1 tablespoon) 1 TBSP olive oil 1 small onion, sliced thin 1 small carrot, shredded 1 clove garlic, minced 1/2 head of cabbage, cut into 1/2 inch slices 1 TBSP brown sugar 1/2 cup water 1/4 tsp red pepper flakes (optional) salt and black pepper Wedge of fresh lemon (for finishing) In a large pot or Dutch oven with a lid, add 2 TBSP butter and 1 TBSP olive oil. Over medium-high heat, melt butter and add onion, carrot, garlic, red pepper flakes and salt and pepper (to taste). Saute vegetables until fragrant and softened, about 5 minutes. Add slices of cabbage, brown sugar, water and additional salt and pepper (to taste) and toss well so that everything in the pot is well combined. Cover and cook over medium-high heat, stirring occasionally. This will take about 15 minutes. Cabbage will cook down and soften, but it should still be slightly crunchy. Take off heat and add remaining one TBSP of butter and toss until butter is melted and combined. When ready to serve squeeze fresh lemon juice over the top of cabbage.
