For the 2021 Roux Scholarship Final, the 6 chefs were asked to cook two recipes that mean a lot to the Roux family. The dishes, Oeuf Albert, and Little Flans with Snails in Green Coats, are a tribute to Michel Roux Jr’s father, Albert Roux, and Alain Roux’s father, Michel Roux Sr.
