Make a syrup from water and sugar, heating it to 120-121°C. Meanwhile, beat the whites at low speed until foamy (be careful not to overbeat). 2. Gently pour the syrup into the whites, whisking. Whip the meringue until stiff. 3. Transfer to a pastry bag and use to decorate desserts. This meringue can also be baked in the oven at 80 to 100°C (176 to 212°F) for about 2 hours.
