For the Urojo gravy: 1/2 cups boiled chana (brown chana) 2 Medium potatoes boiled, peeled, cubed 1/2 Cup raw peeled and grated mango 1/4 Tsp turmeric powder (haldi) 1 -11/2 Tsp salt 1 whole scotch bonnet pepper 2 Tsp red chilli powder 4-5 Cups water 50 ml thick coconut milk/cream 2-3 tbsp white flour For the chutney : Tamarind chutney .......................... Soak fresh tamarind in water for 1/2hr and then mash and squeeze out all the pulp. Discard the seeds, blend the pulp and water, add salt to taste. Add fresh red chilli paste/ powder. For Coconut Chutney: .................................... 1 Small coriander bunch 1 Cup grated fresh coconut 1/2 Tsp salt 1 cup water 4 green chillis lemon juice as per taste 1 Small raw mango, peeled and grated ................................................ For Vada/ bhajia : 1 Cup moong dal 1 Cup chopped fresh fenugreek (methi) 1 cup finely chopped bhaji leaves 1 Tsp cumin seeds (jeera) 1 Tsp salt 4 fresh garlic cloves 1/2 inch ginger 3 chillis finely chopped 1/2 Cup finely chopped onion ................................................................ other topping ingredients ........................
