SINCE 1983 This information is posted near the entrance. The chef mentioned that he started with Japanese cuisine in 1983, and that Sushi Ai opened six months after Sushi Hosan. (I should have asked him directly, but Googling suggests he opened in 2012. So, he's been around for about 15 years.) Even though it was lunch, quite a few appetizers were served. The aging of the flounder was firm yet melted away, and the bettarazuke, which he said he marinated himself, wasn't too salty and was quite good. Looking at the sushi ingredients that followed, they were served in a classic style that showcased the characteristics of the ingredients without any rough edges. Finally, the gizzard shad aged for a month that I requested separately. It started mildly at first, but towards the end... The anchovy flavor was explosive. It was very impressive because it was delicious from start to finish without any rough texture whatsoever. Even though it was my first visit, I could feel the chef's expertise in many places. I expect to experience a wider variety during dinner, but personally, since I came to Daejeon to watch baseball... hmm. Anyway, following the sushi restaurants in Daejeon last time, this time it was Sushi Ai. I think there are really many good sushi restaurants in Daejeon.
