How to smoke pork steak – Weber Smokey Mountain - Direct Heat Pit - Low & Slow

Tootsie is famous for her pork steak and in this video, I will show you how to redo it at home! You will need: 1 pork shoulder without the skin Cut the steaks: 2.5 inch (6cm) thick Apply some yellow mustard for the rub to stick on Simple Texas rub: 50% coarse salt or kosher salt / 50% cracked pepper Set up the smoker at 120C (250F) Cook the steaks in direct heat with grades at 60 cm over the coals Let it smoke for 2 hours To prepare the the mop, you will need 1 Tbsp vegetable oil 1 Onion 100g (4oz) of butter 120 ml (½ cup) Worcestershire Sauce 120 ml (½ cup) Cider Vinegar 1 tbsp Dried Mustard 500ml (2 cups) of water Fry the onions with the vegetable oil. Once the onions are soft, add butter, Worcestershire Sauce, Cider Vinegar, Dried Mustard Stir it well Add the water, let it cook for 10 min Blend the mix as you don’t want to have any chunks * make sure you keep the mop hot as it would cool down your steaks when you apply it* Apply the mop every 40 min after the first 2 hours. Do not rub it as you would take the rub off! When the internal temperature of the steak has reached 65C (149F), flip the steaks Keep on adding more mop very 40 min. Cook the steaks until the internal temperature has reached 85C (185C) Let them rest for 30 min Enjoy!!!!
