I'd like to introduce a simple steamed rice flour bread recipe that only requires mixing and steaming. It doesn't use butter or oil, yet it turns out wonderfully light and fluffy. It's a popular recipe in my classes. Today's treat is one of my most treasured recipes. It's delicious even without sweet potatoes. Candied chestnuts, raisins, or sweetened beans are also recommended. 15cm diameter metal colander Calories: 860kcal Fat: 10g Without sweet potato: 790kcal Fat: 9.7g [Ingredients] Sweet potato (with skin): 50g Egg (medium): 1 (approx. 50-60g net weight) Sugar: 40g Milk (or soy milk): 45ml Rice flour (Tomizawa Shoten/Kumamoto Seifun Mizuho Chikara): 110g Baking powder: 7g Vanilla oil: as needed *The consistency will vary considerably depending on the type of rice flour. I recently made this using Namisato rice flour (for cooking and baking). I added 30ml of water, for a total of 75ml. Because of the increased water content, the sweetness became very mild, and I enjoyed it with jam. [Preparation] ・Wash the sweet potato well, cut it into 7mm cubes, and soak it in water for about 5 minutes. Line a sieve about 15cm in diameter with a damp baking sheet, wrinkle it, gently open it, and place it inside. Boil water in a steamer. [Instructions] 1. Place the drained sweet potatoes in a heatproof bowl, cover with plastic wrap, and heat in a 500-watt microwave for 2 minutes. 2. In a bowl, combine the egg and sugar and whisk until the sugar dissolves. 3. Add the milk (or soy milk) and mix. 4. Add the rice flour, baking powder, and vanilla extract and mix. 5. Add the sweet potatoes, reserving 1 tablespoon for garnish, and mix with a rubber spatula. 6. Pour the mixture into the sieve lined with baking sheet and scatter the reserved sweet potatoes on top. 7. Place in the boiling steamer and steam over high heat for 10 minutes. Check that the water is still there and steam for another 5 minutes. 8. Once steamed, insert a bamboo skewer to check for doneness. [Tips] ・Steaming the batter soon after mixing will help it rise better. ・The amount of soy milk needed will vary depending on the type; adjust the amount to achieve the desired consistency. ・Start steaming once the steam begins to rise, and steam for 10 minutes without opening the lid for best results. ・Insert a bamboo skewer to check if it's cooked through. ・As an alternative to sweet potatoes, candied chestnuts or sweetened beans are also recommended. It's delicious even without any other ingredients. [Storage] Store at room temperature in a cool place until the next day; for longer storage, refrigerate or freeze.
