Torrijas filled with custard (with sliced bread). 🛒 Ingredients (12 servings): 🔸 12 slices of crustless bread 🔹 600 ml milk (2 1/2 cups) 🔸 60 g sugar (1/4 cup) 🔹 2 cinnamon sticks 🔸 Zest of 1 lemon 🔹 6 large eggs 🔸 Oil for frying 🔹 Sugar and cinnamon for coating Pastry cream: 🔸 500 ml milk (2 cups) 🔹 80 g sugar (1/3 cup) 🔸 45 g cornstarch (1/3 cup) 🔹 4 large egg yolks 🔸 A dash of vanilla essence 🍳 Recipe for Custard-Filled Torrijas, step by step (Rolled Torrijas) Filled: 1️⃣ Infuse the milk with the sugar, cinnamon, and lemon zest over low heat. Stir occasionally to combine the sugar and prevent the milk from burning. As soon as it begins to boil, remove from heat, cover with a lid, and let cool completely. 2️⃣ Prepare the cream. In a saucepan, combine the milk, sugar, egg yolks, cornstarch, and vanilla extract. Mix well with a hand whisk. Return to a simmer and cook over low heat, stirring constantly, until thickened. Pour into a deep dish and cover with plastic wrap (the wrap must be in contact with the surface to prevent a skin from forming). Let it cool in the refrigerator once it has cooled. 3️⃣ Shape the slices of bread into canutillos. To do this, roll a rolling pin (if you don't have one, use a bottle) over the bread slice to flatten it slightly (this way, it'll be more flexible and won't break). Shape it into a cylinder and join the edges together, pressing firmly with your fingers. Repeat with all the slices. 4️⃣ In a saucepan, deep frying pan, or wok, heat plenty of oil. Strain the milk into a large bowl, and in another, beat the 6 eggs. 5️⃣ When the oil is hot, roll a small tube through the milk. Do this superficially, without submerging it completely, as it absorbs the milk very quickly and would become very soft and break. Then, roll it through the egg on the outside and, with the help of a spoon, pour egg into the center so that it's completely covered (if it's not covered completely, the egg would remain soft and absorb the oil). Then, fry it. 6️⃣ Fry in batches of 2. Turn them over until golden brown, then remove them from the oven and place them on absorbent paper to remove any excess oil. 7️⃣ When the bread is cold, place the cream in a piping bag and fill the cannoli.
