This Might Be My Favorite No-Bake Pie Ever (Strawberry Cream Cheese!)

A simple homemade strawberry cream cheese pie made with an easy graham cracker crust, a sweet cream cheese layer, and topped with fresh strawberries in a homemade jam glaze. Ingredients 1 ½ cups (170 g) graham cracker crumbs, (or 11 graham cracker sheets pulverized to crumbs in a food processor) 2 Tablespoons sugar 1 Tablespoons brown sugar, packed 7 Tablespoons (100 g) butter, melted Strawberry topping 5-6 cups (840 g) quartered strawberries, stems removed, divided (see note) ½ cup (100 g) sugar 2 Tbsp cornstarch 1 Tbsp lemon juice Cream Cheese Layer 8 oz (225 g) cream cheese, softened ½ cup (65 g) powdered sugar ½ teaspoon vanilla extract 1 cup (235 ml) heavy cream Instructions 00:00 Introduction 00:23 Preheat oven to 350F (175C). Stir together graham cracker crumbs and sugars in a medium-sized bowl. Add melted butter and use a fork to combine ingredients well until crumbs are all moistened. 01:13 Pour mixture into pie plate or springform pan. Use the (clean!) bottom of a measuring cup to firmly pack crumbs into the bottom of the pan and (if using a pie pan) gently press up the sides. Use your fingers to pack crumbs tightly into the sides of the pie pan. 01:40 Bake on 350F (175C) for 10-13 minutes and allow to cool before filling. 02:00 In small saucepan, combine 2 cups (280g) strawberries, sugar, cornstarch, and lemon juice over medium-low heat. 02:51 Stir frequently until strawberries release their juices and are softened. 02:58 Use a potato masher to crush the strawberries until mostly liquid (it's fine if small pieces are remaining). 03:08 Increase heat to medium-high and bring to a boil, stirring constantly. 03:11 Boil (still stirring constantly) for 1 minutes and remove from heat, place in new heat proof container to cool faster. Add the remaining 3-4 cups (560g) quartered strawberries into the mixture and stir well. Set aside while you prepare your cream cheese layer. 03:55 In a medium-sized mixing bowl, use an electric mixer to beat the heavy cream to stiff peaks. 04:50 In a separate medium-sized bowl, beat together cream cheese, powdered sugar, and vanilla extract until combined. 05:38 Fold the whipped cream into the cream cheese mixture until uniform -- the resulting mixture will be thick and fluffy. 06:20 Spread evenly into prepared graham cracker crust and place in refrigerator while your strawberry mixture continues to cool. 07:03 Pour over cream cheese layer, piling/mounding strawberries towards the center. 07:24 Return to refrigerator and allow to set at least 4 hours (preferably overnight) before slicing and serving. Notes Graham cracker crust: Bake the graham cracker crust according to instructions and allow to cool before filling. Strawberries I usually buy or measure out 2 lbs of strawberries.
