Quick Sweet Potato Sabzi | Sanjeev Kapoor Khazana

An easy, quick and amazing way to include the nutritious sweet potatoes in your diet. Who said shakkarkand is just a fasting ingredient? Try this recipe and it is going to be a regular on your dining table! QUICK SWEET POTATO SABZI Ingredients 4 medium sweet potatoes, boiled, peeled and cut into ½ inch cubes 2 tbsps oil 1 tsp cumin seeds 2-3 green chillies, slit 8-10 curry leaves 2- 3 tbsps roasted and crushed peanuts + for garnish Salt to taste ½ tsp Tata Sampann Chilli Powder ½ lemon 2 tbsps chopped fresh coriander + for garnish 2 tbsps scraped coconut + for garnish Method 1. Heat oil in a nonstick pan. Add cumin seeds. Once they start to change the colour, add green chillies, curry leaves and sauté for a few seconds. 2. Add the sweet potatoes and mix well. Add peanuts and mix. 3. Add salt and toss well. Sauté for 3-4 minutes. 4. Add Tata Sampann Chilli Powder and toss well. 5. Switch off the heat and squeeze lemon juice and mix well. 6. Add coriander and coconut and mix well. 7. Transfer into serving bowl. Sprinkle coriander, coconut, peanuts and serve hot with rotis.
