It is traditionally extensive farming that utilizes land where cattle and sheep are unprofitable. It only recently became intensive (after World War II), with the emergence of milk collection by private dairy companies or cooperatives. It involves the raising of one or more goats. It originates in the Mediterranean basin and remains marginal in remote areas. The breeding process has led to domestication and the emergence of specialized breeds for this type of livestock use, originating in Europe. The purpose of production is to provide: Stem milk: mainly for processing into cheese, but fresh milk consumption remains high in Western Asia and North Africa. In Europe, there is a small market for UHT milk. The list of goat's milk cheeses is a measure of the diversity of production. Meat: This has traditionally been important in western Asia and North Africa. In the West, it has become marginal. Goat meat is widely consumed during Easter in goat cheese-producing areas, and a small tradition of making smoked goat meat persists in the Alps.
