How to make TAKE AWAY sweet and sour king prawns in batter
Sweet and sour king prawns in batter is another type of sweet and sour batter dish popular in the UK Chinese take away. It is cook similar to sweet and sour chicken in batter, but with king prawn instead. Ingredients 10 raw tiger prawns (26/30 size) marinate in pinch of salt, MSG, pepper powder, dash of sesame oil and shao xing wine Batter 300g self-raising flour 300ml water 5g salt 5g MSG Dash pepper powder Put all the batter ingredients into a large bowl and whisk thoroughly. Vegetable oil for deep fry Heat the oil to around 180C and deep fry the prawn one at a time. As you put the prawns in; wait a few seconds for it to set (around 20 sec.) then take it out and set aside. Do this with all the prawns and then put them all back together to deep fry for 8 minutes at 180C . This way all the prawns will be cooked at the same time and their color will be the same. Otherwise the prawns you deep fry first will be over cooked while the last one to go in will not be cooked. The color will be different. The first one deep fry will be too dark while the last prawn you deep fry will be too light in color.
