Ingredients: 3 medium eggplants 3-5 colored bell peppers 1-3 fresh chili peppers 2-4 celery stalks (without leaves) 1 bunch of cilantro 80-100 g walnuts 4-5 large cloves of garlic 1 medium head of blue onion (or white salad onion, or even regular onion) 1-1.5 tsp salt 3-6 tbsp vinegar 9% 1 tbsp apple cider vinegar - optional 0.5-1 tsp dry chili (if fresh pepper is not hot enough) Olive oil (or other vegetable oil) for cooking vegetables in the oven (3-4 tbsp) Optional, you can add other seasonings: coriander, utskho-suneli, sugar.
