Season with salt, cumin, paprika, and olive oil. Sear in butter until golden, brush with rosemary-infused oil, flip, and cook the other side. Transfer to a baking tray, add rosemary sprigs, cover with foil, and bake at 180°C (350°F) for 20 minutes. In a baking dish, combine leeks, bell peppers, tomatoes, and garlic with olive oil and spices. Bake for 25 minutes at 180°C (350°F). Blend the roasted vegetables into a smooth purĆ©e.
