Crispy Cheese Corn Balls These Crispy Cheese Corn Balls are crunchy on the outside, soft on the inside, and filled with a delicious gooey mozzarella centre. Perfect for tea-time, parties, or whenever you’re craving a cheesy snack! Ingredients For the Mixture 4 medium potatoes, boiled and mashed ½ cup sweet corn, finely chopped (or as preferred) ½ cup grated processed cheese (or any regular cheese) 1 teaspoon chilli flakes 1 teaspoon oregano ½ teaspoon black pepper powder 1 teaspoon finely chopped garlic 1 teaspoon finely chopped green chilli 2 tablespoons cornflour 2–3 tablespoons breadcrumbs Salt, to taste For Stuffing Mozzarella cheese cubes For Coating 2–3 tablespoons cornflour 4–5 tablespoons water (to make a smooth slurry) ½–1 cup breadcrumbs (or as needed) For Frying Oil, as required Method 1. Boil the potatoes until tender. Peel, mash them well, and allow them to cool completely. 2. In a large mixing bowl, combine the mashed potatoes, chopped sweet corn, grated processed cheese, chilli flakes, oregano, black pepper, garlic, green chilli, cornflour, breadcrumbs, and salt. Mix everything until well combined. 3. Take a small portion of the mixture and flatten it slightly. Place a cube of mozzarella cheese in the centre, then seal the edges and roll it into a smooth ball. Repeat with the remaining mixture. 4. In a small bowl, prepare a smooth slurry by mixing the cornflour with water. 5. Dip each ball into the slurry, then coat it evenly with breadcrumbs. For an extra crispy coating, repeat the slurry and breadcrumb coating once more. 6. Refrigerate the coated balls for 15–20 minutes to help them firm up before frying. 7. Heat oil over medium heat. Fry the balls in batches until they are evenly golden brown and crispy. Avoid overcrowding the pan. 8. Remove and place them on a paper towel to absorb excess oil. Serving Suggestion Serve hot with Thai Sweet Chilli Sauce for the perfect combination of sweet, tangy, and mildly spicy flavours. The crispy coating with the gooey mozzarella centre makes every bite absolutely irresistible! Tips Let the mashed potatoes cool completely before mixing. If the mixture feels too soft, add a little more breadcrumbs. Fry on medium heat to ensure the cheese melts perfectly while the coating turns golden and crispy.
