In sauce pan combine 2 sticks butter 1 cup light corn syup 2 cups sugar 1 cup packed brown sugar 1 cup evaporated milk 2 cups heavy whipping cream cook on medium to medium low heat until the temperature reaches 245 take off heat, add 1.25 tsp vanilla, mix well pour onto a baking sheet that is topped with parchment paper and buttered. Spread caramel mixture evenly over pan. Cool at room temperate. Once you are ready to cut caramel place in refrigerator for 15 minutes, then cut.
