André VALADIER At the age of 26, on March 15, 1960, André Valadier and a group of young farmers founded the "Jeune Montagne Dairy Cooperative" in La Terrisse. The following year, they obtained a Controlled Designation of Origin (AOC) label. The first Fourmes cheeses were then produced on his farm. Around thirty producers then chose to deliver their milk to the cooperative. This cheese business was the first step in the preservation of native cattle herds, the revival of AOP Laguiole cheese, and the expansion of aligot, the culinary specialty derived from it. André Valadier was a major player in the preservation of the rural Aubrac plateau, promoting cheese and aligot, craftsmanship with Laguiole knives, and the breeding of Aubrac and Nénette cows. In 1984, he refused to receive the National Order of Merit because he considered at the time that he had to act illegally to save local production. However, in 2010, he was awarded the Legion of Honor by the Ministry of Rural Areas and Regional Planning, and in 2014, he received the Gold Medal from the French Academy of Agriculture. A former president of the Aubrac Regional Natural Park, Bernard Bastide is the new president of the Aubrac Regional Natural Park. His motto is "Tradition without modernity is sterile, but modernity without tradition is blind." Former Minister of Agriculture Edgard Pisani, during the governments of Debré and Pompidou from 1961 to 1966, declared: "The heritage of Aubrac is André Valadier."
